"1/4 cup butter
3 eggs
3/4 cup milk
3/4 cup flour
Preheat oven to 425. Place butter in casserole dish (or cast iron skillet, whatever) and melt in the oven while you're beating the eggs and milk, and gradually adding the flour. Take the pan out (before the butter burns, that's pretty crucial) and pour the batter in the pan. Bake for 20-25 minutes.Serve immediately with powdered sugar, sour cream, jam, whatever. My favorites are sour cream and apple butter. For those on Weight Watchers, 1/4 of this recipe is 7 points, because I use 1% milk."
